When it comes to books about ambisonic, every list starts with this great book:

When we started with ambisonic, this was THE source of knowledge and it still is. If, like us, you have forgotten more about matrices than you ever learned, it may be difficult to understand every detail. However, the pictures will guide you in a fascinating way. In other words, you can skip the math and come back to it later if you like.
There is another book "Using Ambisonics in the Recording Studio" by David Lauritsen. It has been issued in Feb 2023 and we haven't read it yet. But we do mention it here.

AES - Papers
We would also recommend creating an account on AES. (Audio Engineering Society) Once you have your login details, you should browse through the AES E-Library and look for papers of interest. Some of the papers are difficult to understand as they are aimed at specialists and experts. However, most of them are not too difficult to understand. From our experience, if you politely ask the authors questions after reading the text at least twice, they will reply and be willing to help.
Nevertheless, if you look for "ambisonic" you will get 940 results. Some of them are a little bit outdated, but some of them are very brandnew.
